Tuesdays is Taco Night :) We usually skip the lettuce and fill our hard-shell tacos with pre-cooked beef or chicken fajita meat, salsa instead of fresh tomatoes, sour cream and shredded cheddar. Sometimes we layer them with refried beans on a soft shell taco. Add Mexican rice and white corn tortilla chips for an easy and satisfying meal! { 1 }
